Flam Reserve Merlot - Library Wines Collection 2011
Merlot Reserve is a blend of 85% Merlot, 10% Cabernet Sauvignon, and 5% Cabernet Franc sourced from our best of plots in the Dishon vineyard (Upper Galilee). The grapes were carefully selected and hand-harvested in early morning hours from low yielding vines. At the winery the grapes are destemmed then cold macerated for 48 hours. The fermentation takes places in stainless steel temperature controlled tanks at 25-26 degrees for 14 days with regular remontage to help extract colour, aromas and varietal character. The wine aged in French oak barrels of which 30% are new at the rest one to two years old. Each varietal ages separately for 12 months, after which the final blend takes place. After bottling the wine is aged for an additional 10 months in our cellars. Drinks well now but will improve over the next 8 to 10 years. A rich nose that combines red fruit notes with soft oak spice. The palate is intense and complex with dominant ripe fruit, luscious tannins, and elegant spices. The finish is long and leaves a fruity and touch sweet memory. Serve with a roast rack or leg of lamb served pink, a Beef Wellington or simply roast duck.
While the wine inside this bottle has aged gracefully, the same can not be said for the labels. Both front and back labels have a tendency to fade, peel and change color over time.This is a vegan wine.
